Gujarat's Famous Dhokla Read About It & It's Recipe In English & हिंदी



Dhokla is a traditional Indian snack from the state of Gujarat, made from fermented batter of rice and chickpea flour. It is steamed and then tempered with mustard seeds and curry leaves. Dhokla is typically served with chutneys or as a side dish with Indian meals.


Here is a recipe for making dhokla at home:


English recipe:

Ingredients:


1 cup chickpea flour

1/2 cup rice flour

1/2 tsp sugar

1/2 tsp salt

1/2 tsp fruit salt (such as Eno)

1/2 cup water

1/4 cup yogurt

Oil for greasing

1 tsp mustard seeds

1 tsp sesame seeds

2-3 curry leaves

Instructions:


In a mixing bowl, combine the chickpea flour, rice flour, sugar, and salt. Mix well.

Add the water and yogurt to the flour mixture and stir until well combined. Cover the bowl and let the batter ferment for 4-6 hours.

Once the batter has fermented, add the fruit salt and mix well.

Grease a steaming plate or idli plates with oil.

Pour the batter into the greased plate and smooth out the surface.

Place the plate in a steamer and steam for 15-20 minutes, or until a toothpick inserted into the center comes out clean.

Remove the plate from the steamer and let it cool for a few minutes.

Cut the dhokla into small squares or diamond shapes.

In a pan, heat oil and add mustard seeds, sesame seeds and curry leaves. Once the seeds start spluttering, pour this tempering on the cut dhoklas.

Serve the dhokla warm with chutneys or as a side dish.

1 कप चना आटा

1/2 कप चावल आटा

1/2 चम्मच चीनी

1/2 चम्मच नमक

1/2 चम्मच फ्रूट सॉल्ट (Eno जैसा)

1/2 कप पानी

1/4 कप दही

तेल डोकले के लिए

1 चम्मच सरसों के बीज

1 चम्मच तिल के बीज

2-3 करी पत्ते

निर्देश:


मिक्सिंग बॉल में चना आटा, चावल आटा, चीनी, नमक को मिलाएं। अच्छी तरह से मिलाएं।

2. आटे को पानी और दही को मिलाकर स्वाद सुनाएं। बैटर को कप से कप कर के 4-6 घंटे के लिए फर्मेंट करें।


बैटर फर्मेंट होने के बाद, फ्रूट सॉल्ट को मिलाकर अच्छी तरह से मिलाएं।

स्टीमिंग प्लेट या इडली प्लेट को तेल से स्वादिष्ट करें।

तेल से स्वादिष्ट किए प्लेट में बैटर को भरें और समान करें।

प्लेट को स्टीमर में डालें और 15-20 मिनट के लिए स्टीम करें, या जब टूथपिक को केंद्र में डालने से साफ़ हो जाए तब।

स्टीमर से प्लेट को निकालें और कुछ मिनट के लिए ठंडक दें।


धोकला को छोटे स्क्वायर या डायमंड शैप के रूप में काटें।

पैन में तेल को गरम करें और सरसों के बीज, तिल के बीज और करी पत्ते को डालें।


चटनी या साइड डिश के साथ धोकला गर्म सेव करें।
